BBQ

The one thing we miss most about North Carolina are friends and family, but the one THING we miss most is NC BBQ! The BBQ is just not the same down here! :(  My entire family loves BBQ and we have all started making it at home. The best way to do it, is to take a pork tenderloin and throw it in the crock-pot. Then pour your favorite BBQ sauce on top!

Down here it can be tough to find a vinegar-based sauce, but we have found a couple that we go back in forth with. I will also from time to time, mix it up and use Bone Sucking Sauce (Tyler's favorite).

Cook your pork on low for about 5 hours, then take a fork and shred the pork loin. I usually add more sauce after the pork loin is shredded, and let it cook for another 15 minutes or until ready to eat! This meal makes us feel like we're back home!

A Perfect Date Night In

After a weekend out of town for the ECU football game, the last thing we wanted to do was eat take out or go out. We decided on a pizza and movie night, but not just any pizza... we made our own! We took a trip to Trader Joe's and got all of the toppings we planned on using and opted for their dough. We LOVE using our pizza stone and decided a homemade pizza was the best time to bust it out! Yes we took the easy way out and didn't make our dough from scratch, but when your in a hurry it is very good!

                                        Tyler rolling out the dough!

                                               Before

Personally, I enjoyed doing pizza because it involved both of us. Tyler rolled out the dough and we each put our toppings on each of our halves. I must say the end result was better than Papa John's! It was the perfect dinner to sit down and watch a movie to.

                                             YUMMM!!!

Catching up!!

Hello All,

I wanted to start a blog so that friends and family can see what we are up to down here in the deep south! We are loving Georgia and are so excited to make this our new home. Tyler and I are in the process of buying our first home. We can't wait until our closing date! Pictures to come, don't worry.

Tyler's job is going very well. He loves having a "normal" schedule, and is able to hit the links everyday after work! I have also taken on a new job in sales for the Salon Center (based out of Birmingham, AL). It has been keeping me busy and is  A LOT of driving!

It's hard to believe the summer is coming to an end and we will be home for the holidays before we know it!  I hope you will continue to check in on my blog for updates!

Until next time...
